Spinach Feta Tortilla Quiche
Another recipe from my dear friend @healthyeasytasty.kitchen — no pastry needed: whole-wheat tortillas form the crust, topped with spinach, eggs and feta. Light but filling, in the oven in 10 minutes.

Ingredients
- 3 whole-wheat tortillas
- 5 eggs
- 300 g fresh spinach (washed and drained well)
- 120 g feta cheese
- 1 tsp olive oil (for greasing the dish)
- 1 pinch salt
- 1 pinch black pepper
Method
Gluten-free option ↓- 1
Preheat the oven to 180°C. Lightly grease a baking dish with olive oil.
- 2
Arrange the 3 tortillas in the dish with no gaps, overlapping the edges slightly.
- 3
Spread the washed and well-drained spinach over the tortillas.
- 4
Whisk the eggs with salt and pepper, pour over the spinach and mix gently.
- 5
Crumble the feta on top and add another pinch of pepper if you like.
- 6
Bake at 180°C for 20–25 minutes, until the eggs are set and the feta is lightly golden. Tip: If the spinach releases water, give it a stir now and then while baking — you can also raise the temperature a little and bake longer.
Gluten-free swap
Swap the whole-wheat tortillas for corn tortillas or certified gluten-free ones — the rest of the recipe is naturally gluten-free.
