Baked Shrimp with Feta

Ingredients
- 180 g shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 bell pepper, chopped (optional)
- 4 mushrooms, sliced (optional)
- 1 ½ tomatoes, grated (or tomato passata)
- ½ tsp black pepper
- ½ tsp red pepper flakes
- ½ tsp dried oregano
- 1 pinch cumin (optional)
- 20 g feta cheese (or enough mozzarella to cover the top)

Sear the shrimp in a pan with a little olive oil for 1-1.5 minutes, until they turn pink.

If using, add the chopped bell pepper and mushrooms and sauté for a few more minutes.

Add the grated tomato (or passata).

Stir in the black pepper, red pepper flakes, oregano and optional cumin.

Cook for a few more minutes until the sauce reduces slightly.

Transfer everything to a baking dish and scatter the feta or mozzarella on top.

Bake in a preheated 200°C (390°F) oven for 7-10 minutes, until the cheese is golden — watch it closely, the shrimp toughen if overcooked past the 7-8 minute mark.
