Ingredients

Servings:2
  • 200 g quinoa, cooked
  • 2 medium zucchini, grated and squeezed dry
  • 2 eggs
  • 2 tbsp ground flaxseed
  • 2 cloves garlic, grated
  • 1 tsp cumin
  • ½ tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper
  • 80 g feta, crumbled (optional)
  • 1 tbsp olive oil (for brushing)

Method

  1. 1

Heat the oven to 200°C (180°C fan). Line a baking tray with parchment paper.

  2. 2

Squeeze the grated zucchini firmly in a clean tea towel or cheesecloth to remove as much liquid as possible — this step matters, or the patties won't hold together.

  3. 3

Put the cooked quinoa in a large bowl. Add the squeezed zucchini, eggs, flaxseed, grated garlic, cumin, red pepper flakes, salt and black pepper.

  4. 4

If using, stir in the crumbled feta now. Mix everything together with a spoon until well combined.

  5. 5

Divide the mixture into 8 equal portions, press gently into flat patties with your hands, and arrange them on the tray.

  6. 6

Brush the tops lightly with olive oil. Bake for 25–30 minutes, until lightly golden on top, flipping once halfway through.
