The classic onion-free menemen, made with plenty of ripe tomato, green pepper and eggs. The secret is cooking down the tomato well and keeping the eggs soft and creamy.

  • 3 medium ripe tomatoes
  • 2 green peppers
  • 3 eggs
  • 1 tbsp butter
  • 1 tsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch red pepper flakes (optional)

Method

    Finely chop the peppers. Add the butter and olive oil to a pan and sauté the peppers for 3–4 minutes, until softened.

    Grate the tomatoes or cut them into small cubes. Add them to the pan with a little salt.

    Cook the tomatoes over medium-high heat for 7–10 minutes, until the excess liquid has evaporated and the sauce thickens slightly. This step really changes the flavour of the menemen.

    Crack the eggs straight into the pan. Break up the yolks gently, but don't beat them into a fully uniform mixture.

    After 1–2 minutes, while the eggs are still slightly runny and creamy, take the pan off the heat — they'll keep cooking in the residual warmth.

    Add black pepper and red pepper flakes if you like. Serve with crusty bread and feta cheese.
