  • 400 g starchy potatoes
  • 100 g flour
  • 1 egg yolk
  • ½ tsp salt (for the dough)
  • 1 pinch grated nutmeg (optional)
  • 1 medium onion
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 400 g tomatoes (grated or canned chopped)
  • 1 tbsp tomato paste (optional)
  • 1 tsp red pepper flakes (for heat)
  • ½ tsp salt (for the sauce)
  • ¼ tsp black pepper

Method

    Boil the potatoes whole, in their skins, until soft all the way through — a knife should slide in easily. Drain, let cool slightly, then peel.

    Mash the potatoes while still warm until smooth.

    Add the flour, egg yolk, salt and optional nutmeg to the mashed potato. Mix just until it comes together — don't overwork the dough, or the gnocchi will turn out dense.

    Roll the dough into thin ropes and cut into pieces about 2 cm long.

    For the sauce, heat the olive oil and sauté the finely chopped onion and garlic until soft. Add the tomato paste and cook for another minute.

    Add the tomatoes, red pepper flakes, salt and black pepper. Simmer over low heat for 15-20 minutes, until the sauce thickens.

    Boil the gnocchi in salted water until they float to the surface, about 2-3 minutes, then drain.

    Toss the boiled gnocchi with the tomato sauce and serve hot.
