Frozen Blueberry Smoothie

Creamy, refreshing and under 200 calories. Inspired by the yoghurt smoothies I had almost every day in South Korea — this is my lighter, everyday version.

Ingredients

Servings:1
  • 150 g frozen blueberries
  • 150 g 0% fat Greek yoghurt
  • 120 ml oat milk, frozen into ice cubes (or any milk you prefer)
  • 1 tsp honey (optional)
  • ½ tsp vanilla extract
  • 1 small squeeze fresh lemon juice

Method

  1. 1

The night before, pour the oat milk into an ice cube tray and freeze. This keeps your smoothie thick and creamy without watering it down.

  2. 2

Add the frozen blueberries, Greek yoghurt, frozen oat milk cubes, vanilla extract and lemon juice to a blender.

  3. 3

Blend on high for about 45 seconds until completely smooth and creamy.

  4. 4

Taste and add honey if you'd like a little extra sweetness.

  5. 5

Pour into a glass and enjoy immediately — the frozen berries keep it naturally cold and thick.
